ConcentrateCoffee Bean Cookies
If you like coffee dessert and cookies, you are going to love these cookies. They are beautiful, sweet with the perfect crisp. Ideal for those days when you’re craving extra caffeine and a treat!
Ingredients
- 3 tbsp of Javvy Coffee Concentrate (You can use our decaf version if you don’t want caffeine)
- 2 tbsp cocoa powder
- 3 tbsp cornstarch
- 1 cup cake flour
- 1 egg yolk
- 7 tbsp powdered sugar
- Pinch of salt
Instructions
- 1Preheat oven to 340F (170C).
- 2In a medium bowl mix together the flour, cornstarch, cocoa powder and salt until it’s fully mixed.
- 3In a large bowl, cream together butter and icing sugar. Add egg yolk and stir until combined. Add coffee and whisk until combined. Sift in the flour, cornstarch, cocoa powder and salt mix. Stir until incorporated and dough is formed. Refrigerate for 20-30 minutes.
- 4Scoop out 1 teaspoon of the dough and roll then using your palms, shape them gently into an oval. Arrange then on a baking tray lined with a parchment paper. Then, using a toothpick or a back of a knife press it gently along the diameter of the oval.
- 5Freeze for 10 minutes or refrigerate for 30 minutes.
- 6Bake for 12 minutes. Allow to cool on a wire rack before serving.
