Ingredients

  • ¼ cup canned pumpkin puree
  • 1/2 cup unsweetened vanilla almond milk (or your preferred milk)
  • 1 scoop Instant Protein Coffee
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon pure vanilla extract
  • ½ teaspoon xantham gum
  • 1-2 tablespoons maple syrup or honey (adjust to taste)
  • Ice (optional)
  • Whipped cream (to garnish, optional)
  • Pumpkin seeds (optional)

Directions

  1. In a blender, combine canned pumpkin puree, unsweetened almond milk, vanilla protein powder, xantham gum, pumpkin pie spice, pure vanilla extract, and your choice of sweetener (maple syrup or honey).
  2. Blend the mixture on high until it's smooth and frothy. This should take about 30 seconds to a minute, depending on your blender's power.
  3. Adjust the sweetness and spice level according to your preference. Add more sweetener or pumpkin pie spice if desired and blend again briefly to combine.
  4. Pour the Pumpkin Spice Protein Coffee into your favorite cup. If desired, add ice and top it with a dollop of whipped cream and a sprinkle of pumpkin seeds for added texture and presentation.
