Ingredients
- ¼ cup canned pumpkin puree
- 1/2 cup unsweetened vanilla almond milk (or your preferred milk)
- 1 scoop Instant Protein Coffee
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon pure vanilla extract
- ½ teaspoon xantham gum
- 1-2 tablespoons maple syrup or honey (adjust to taste)
- Ice (optional)
- Whipped cream (to garnish, optional)
- Pumpkin seeds (optional)
Directions
- In a blender, combine canned pumpkin puree, unsweetened almond milk, vanilla protein powder, xantham gum, pumpkin pie spice, pure vanilla extract, and your choice of sweetener (maple syrup or honey).
- Blend the mixture on high until it's smooth and frothy. This should take about 30 seconds to a minute, depending on your blender's power.
- Adjust the sweetness and spice level according to your preference. Add more sweetener or pumpkin pie spice if desired and blend again briefly to combine.
- Pour the Pumpkin Spice Protein Coffee into your favorite cup. If desired, add ice and top it with a dollop of whipped cream and a sprinkle of pumpkin seeds for added texture and presentation.
