The ultimate energy bomb pancake recipe! This recipe will definitely hump your breakfast or brunch, and guess what? It has fewer carbs!Pancakes always feel like a treat, but making this simple swap with protein mix adds more nutritional value to the breakfast. We like topping it with bananas and chocolate chips, but you can also go classic with butter and maple syrup and any fruit you’d like.
Ingredients
- 1-2 scoops Javy Instant Protein Coffee
- 1 banana, sliced
- 1/2 cup (3 oz) oats
- 3 large eggs
- pinch of cinnamon
- 1 teaspoon cacao powder
- 1-2 tablespoons Javy Vanilla Coffee Syrup
- 2 tablespoon plant based milk
- 1/2 teaspoon baking powder
- a handful of dark chocolate chips
- 1/2 teaspoon xantham gum
- Coconut oil or cooking spray for frying
- 1/2 cup (4 oz) Greek or plain yogurt mixed with 1 teaspoon of Javy coffee concentrate
- Toppings of choice
Directions
- Blend the banana, oats, eggs, milk, baking powder, Javy Instant Protein Coffee, xantham gum, Javy Vanilla Coffee Syrup, cinnamon and cocoa powder in a blender for 1-2 mins until smooth. Check if the oats have broken down, if not, blend for another minute. Transfer batter to a bowl and fold in chocolate chips.
- Scoop about ⅓ cup batter onto a hot pan prepared with coconut oil and cook on medium heat for 2-3 minutes per side.
- Repeat for the remaining pancake batter.
- Create the pancake stack by adding a bit of the coffee yogurt until you have a small tower of pancakes. Top with your favorite toppings.
